Restaurant grease ducts are supposed to accessible for cleaning. Sometimes that is not the case and we have to get a little creative in order to get the kitchen exhaust system clean. This is a restaurant in West Hollywood that we needed to go the extra mile on to get it up to fire codes.
If not cleaned properly on a regular basis, restaurant exhaust systems can become clogged with grease or oily sludge. Sometimes the only way to remove it it by crawling through and manually scraping the duct. It is not an easy job.
